VINIFICATION
For Chardonnay 2018: soft pressing and destemming and fermentation in stainless steel in contact with the skins for 5 days, then racking and fermentation in white for about 2 weeks. Aging for 18 months in steel.
For Malvasia 2017: soft pressing and destemming of the grapes and fermentation of the must in steel tanks in contact with the skins for 15 days with daily pumping over. Racking and subsequent ageing on fine lees for 12 months in third passage oak barriques.
